There is nothing that I love more than Jamaican food and since it’s so cold where I live right now (despite it being spring,)why not transform our next dinner into a hot island affair. Throw a bright flowered print tablecloth on the table, put on a little Reggae music, turn the heat up just a tad, put on a sundress and stick a flower in your hair. You will forget about going out in this snowy weather AND any cold weather blues you may have. If you have any seashells at home, put them in a big bowl and use them as a centerpiece! Party and have fun, but if you party too late you can always use Smashbox Photo Op under eye brightner in the AM.
Grilled Shrimp Kabobs over island rice
1 red pepper cut into medium size pieces
1 green pepper cut into medium size pieces
1 red onion cut into medium size pieces
1lb shrimp (washed and deveined)
12 Cherry tomatoes
Prepare marinade and set aside
¼ cup red wine vinegar
¼ cup olive oil
1 tsp ginger
2 cloves of garlic minced
To make marinade, in small bowl combine oil, red wine vinegar, salt, garlic, and ginger.
On 4 skewers alternate shrimp and vegetables. When completed pour marinade over the shrimp kabobs and marinade for 3-4 hours if possible.
When you are ready to grill the shrimp place the kabobs on a grill pan and cook for 5-6 minutes on each side. If you don’t have a grill pan or a grill, you can place them on a 10 inch baking dish and broil for 5 minutes on each side 4 inches from the heat in your oven.
Prepare yellow rice according to package directions and set aside. I like Goya.
When kabobs are ready, put rice and kabobs on a large serving dish or you can make individual plates.
Beverage Suggestion: Pineapple twister (2 parts pineapple juice and 1 part 7 up)
Adult Beverage Suggestion: Jamaican Rum Punch
1 cup fresh lime juice
2 cups grenadine syrup
2 cups Jamaican white rum
1 cup light rum
2 cups fresh pineapple juice
2 cups fresh orange juice
Pinch freshly grated nutmeg, optional
Orange slices, for garnish
Pineapple slices, for garnish
Mix all ingredients together in a pitcher. Chill in the refrigerator for at least 1 hour before serving. Garnish with orange or pineapple slices. And definitely don’t forget the little umbrellas!
