Tis the season to be berry and bright

One of the things that I love about spring and summer is the best berries start to become available in the stores again. Now I am lucky to live right next door to Whole Foods Market which has a really great selection of fresh fruits and vegetables. I did some research on berries a few years ago and came to realize how much power they actually pack. One of the things that stood out is the anti-aging properties and I have been sold ever since. Now I have made it a priority to find tasty recipes to compliment my sweet tooth. Berries are low in fat but oh so sweet and delicious.


Natural Supplement
Berries contain a number of healthful compounds including vitamins A, C, E and folic acid; selenium; calcium; poly phenols; and compounds called anthocyanins, which give berries their color. If you need Vitamin C then just one cup of sliced strawberries would do the trick. If your body is deficient in manganese, a cup of blackberries will come to the rescue. Or, if you need niacin, then have a cup of raspberries. If you need Vitamin E or fiber, then a cup of blueberries and strawberries each will be good for you. Blueberries and raspberries even contain lutein, an important ingredient that is known to improve vision.


Berries contain a low amount of carbohydrates and are good for your health; Berries are packed with antioxidants that have been linked to stalling the aging process. Yes ladies they can also slow down the aging process!

Berry Care
When you are buying berries, check to see whether they are broken. Broken berries tend to rot quicker than others. Rinse the berries only when you are going to eat them and try to eat them within a few days of purchase. Berries are highly perishable, and should not be exposed to sunlight or kept at room temperature

If you are not going to eat them within a day or two, then keep them in a freezer for your next smoothie or cook them into sauce for a special dessert.

Berry Sundae

1 cup strawberries, plus more for garnish

1/2 cup raspberries, plus more for garnish

2 tablespoons sugar

1/2 teaspoon lemon juice

2 cups coconut milk vanilla ice cream, I love Coconut Bliss

Puree strawberries and raspberries with sugar and lemon juice in a blender. Serve atop a slice of angel food cake.
