If you are like me- you looooove sweets but want to keep your waistline slim and sexy.
I have began searching for ways to fine tune those decadent spring and summer treats to make them more figure friendly. Some of the treats that I love to indulge in during the spring and summer months are Strawberry shortcake, banana pudding, grasshopper pie, Lemon Chiffon Cake, Blueberry Cheese Cake Bars, and one of my favorites, Petit Fours. So I am on a quest to make these treats a little more forgiving and I am starting with banana pudding. Enjoy!
Low Fat Banana Pudding!
3-3/4 cups cold unsweetened coconut milk,
divided 2 pkg. (4-serving size each) Vanilla Flavor pudding
32 Reduced Fat NILLA Wafers or Gluten Free Vanilla Wafers if you are intolerant
2 bananas, sliced
2 cups thawed So Delicious Coconut MilkWhipped Topping
Pour milk into large bowl. Add pudding mixes. Beat with wire whisk 2 minutes or until well blended. Let stand 5 minutes. Fold in one cup of whip cream into the pudding.Arrange layer of wafers on bottom and up side of 2-quart serving bowl; Add layer of banana slices; top with 1/3 of the pudding. Repeat layers; Spread the remaining whipped topping over pudding.REFRIGERATE 3 hours or until ready to serve.
You can also substitute the whipped cream with low fat vanilla yogurt in the pudding mix.
